3 Fonteinen Hommage 11/12/2019 B10 19|20 Magnum

This homage is a somewhat different approach than usual. First we macerated 75% cherries and 25% raspberries together. In addition to pure lambic, we also used raspberry lambic in the assembly, so that the fruit proportions are roughly evenly distributed. The final intensity is still 493 grams of fruit per liter of finished Hommage. The maceration took 5.5 months. The lambics used are annual and biennial. The oldest lambic was brewed at the beginning of 2018.
