Assembly of 1, 2 and 3-year old lambic fermented and aged in wooden barrels. During the refermentation, the young yeasts are ‘doused’ or put to sleep, so that the original lambic flavor is retained. This beer pours without foam, just like lambic. Lambic is brewed with 60% barley malt, 40% unmalted wheat, old hops and water.
